Recipe(tried): Delicious Low-Fat Chicken Fajitas...

I think I mentioned last time that DH was told by his Dr. to go on a low-fat diet. His diet meals have made me become quite creative in the kitchen as well as forcing me to read the fat grams on every package.
As you well know, you do not have to sacrifice flavor just because you're on a diet...lately we have been having some realy great dinners and are amazed at how very delicious they are. The simplicity in ingredients amazes me!
Here's the recipe for Chicken Fajitas, you're gonna love eating just one. It is quite filling.
For dessert later on, we will enjoy a cup of assorted cut up plums that are in season now in our stores. All colors, red, black, green and the ones that look like dinosaur eggs!! Yum!!!

Low-Fat Chicken Fajitas
serves 2
2 T. olive oil
1 small onion, sliced thin
1 small green pepper, sliced
1 small garlic clove, minced
1 pkg. Loius Rich Southwestern Style Chicken strips
2 flour tortilla rounds, large ones
1 c. torn lettuce leaves
1/2 tomato, chopped
low-fat sour cream
chunky salsa
Heat oil in a skillet and add onion and pepper slices. Cook over medium high till they are somewhat golden and limp, add the garlic and cook a few minutes more. Add the chicken strips and heat thru for about 5 minutes.
Lay a tortilla on each serving plate, divide the chicken mixture between the two tortillas. Add some tomato and lettuce. Fold up about 1/3 of the way the bottom flap, then fold the left over tucking anything that falls out in, and roll into a fajita.
I like to wrap foil halfway down so there is no mess. Serve with the sour cream and salsa on the side.
