Deluxe Scrambled Eggs

2 tbsp butter -- for sour cream mix
1 cup sour cream
2 tbsp all-purpose flour -- or more
3/4 tsp salt
Parsley -- chopped
2 tsp butter -- for eggs
2 eggs -- beaten lightly
1/8 tsp white pepper
In a small pan over medium heat, melt the butter. Stir in the flour and cook until bubbly. Remove from heat and blend in sour cream. Return to heat and cook until bubbly and smooth; set aside. beat together eggs, salt and white pepper. In a wide frying pan over medium-low heat, melt the remaining butter; pour in eggs and cook, gently lifting cooked portion to allow uncooked portion to flow underneath, until eggs are softly set. Remove from heat and add sour cream mixture. Cook for a moment until fully set. Turn eggs into a serving dish and garnish with parsley.

Serving Ideas : Toast, Bagels
NOTES : Optional Toppings: about 1 cup each of crisp bacon bits, shredded cheese of your choice, sliced ripe olives, sliced green onions, small cooked shrimp or crab meat.
I used smoked gouda cheese, parsley and scallions. It was quite good. Serve with bagels or toast.
