Recipe(tried): Dinner on a cold winter evening - Corn Chowder

I've been reading this board for quite some time now and decided that I would post the meal we had this evening. It was cold and blustery in North Dakota today and I needed to use up some leftovers. I had a thigh, a breast and a drumstick left from last evening's roast chicken. I skinned it and removed the bones, chopped it quite fine, added a couple tablespoons of minced onion and about a tablespoon of finely minced sweet pickles. I seasoned the mixture with salt and pepper and stirred in enough Miracle Whip to bind it together and refrigerated it for several hours. I made a quick, easy and tasty corn chowder and served the chicken salad on toasted whole grain bread along with bowls of piping hot chowder.

Corn Chowder

1/2 to 3/4 lb. bacon, diced
1 large onion, diced
2 carrots, small diced
2 cans creamed corn
1 corn can of milk
salt and pepper to taste

*Brown bacon and onion in dutch oven. Add diced carrots when bacon is almost done. Remove from heat and drain off grease. Return to stove and add creamed corn and milk. Simmer until carrots are just tender. Season to taste.

For dessert we had apples baked with whole cranberry sauce spooned into the center.
