Dinner Swedish Meatballs
2 lb ground turkey
1 lb ground pork
1 1/2 cups bread crumbs
6 eggs
1 cup chopped onions
1 heaping tablespoon corn starch
1 tsp salt (more or less to taste)
1 tsp black pepper (more or less to tast)
Mix all ingredients well. Form into 2" balls and bake on non-stick cookie sheet or jelly roll pan 15 minutes at 350 F. While meatballs are baking, make brown onion gravy in 12 quart stock pot:
1/2 stick butter
2 tbsp flour
8 cups water
1/2 cup chopped onion
flour for thickening
Melt butter in pot, add 2 tbsp flour, stir and cook until flour is nicely browned. Slowly add cold water, stirring constantly to prevent lumping, add onions and bring to boil. Meanwhile, mix 1 cup all purpose flour with enough of the water from the pot (before it gets hot) to make a liquid, carefully stir into pot, using wire whisk to prevent lumps, cook and stir until thickened. If thicker gravy is desired,
mix more flour with water and add as before, slowly stirring it in to avoid lumping. Add salt and pepper to taste. Simmer baked meatballs in gravy over low heat, stirring carefully often, for 1/2 hour. Serve with mashed potatoes or noodles and your favorite vegetables or salad.
**This is the kind of recipe I've made so many times, I don't even have it written down anymore. There aren't any rules -tweak it to your family's taste with additions such as ground carrots, mashed garlic, or chopped sauteed mushrooms - they're your meatballs, be creative and enjoy!**
