Recipe: Eagle Brand Fudge

Desserts - Candy, Chocolate

Judy AZ, I'm reading right now a recipe for "Super Chocolate Fudge" from an Eagle Brand Recipe Booklet, you know the kind that is inserted in magazines. It's not called Rocky Road, but I'll post it anyway, maybe you can improvise. Here goes:
Prep Time: 10 Min.
Chilling Time: 2 to 3 Hours
1 pkg (300 gram) semi-sweet chocolate chips
1 can Eagle Brand Sweetened Condensed Milk
1 1/4 cups (300 mL) icing sugar
Pinch salt
1 tsp (5mL) vanilla
1/2 cup (125)mL chopped nuts
In heavy saucepan, over low heat, melt chips with Eagle Brand. Remove from heat; stir in icing sugar, salt, vanilla and nuts. Spread evenly in wax paper-lined 8 inch square pan. Chill 2 to 3 hours or until firm. Turn fudge onto cutting board; peel off paper; *cut into squares. Store loosely covered at room temperature. Makes about 2 pounds

MICROWAVE in 2 quart (2 L) glass measure , combine chips with Eagle Brand. Microwave, uncovered at High (100%) 2 minutes. Stir until chips melt and mixture is smooth. Stir in remaining ingredients. Proceed as above.

*Fudge may be wrapped well and frozen for up to 6 weeks. Thaw at room temperature before cutting.
