Recipe(tried): Easy chicken cordon bleu

I make a chicken cordon bleu that is very easy. Can be made ahead and then just cooked in the microwave. People will think you slaved for days! Sorry directions are not exact ...

Boneless, skinless chicken breasts pounded between sheets of plastic wrap until very thin

Place on each breast a thin slice of black forest ham as well as a long cube of swiss cheese (which is fairly thick so as not to loose it all when melted.

Roll up jelly roll fashion tucking in ends as you go along. The cheese and meat should be fully encased in the chicken. You can use toothpicks to close at ends and middle or just keep it tucked really tight.

Roll in flour seasoned with salt and pepper. Dip in beaten egg (with a tsp of water). Roll in breadcrumbs or cornflake crumbs (I sometimes use Italian breadcrumbs). Shake off excess, season with salt and pepper and sprinkle lightly on top with paprika.

Continue with remainder. You can at this point refrigerate for up to one day. (I have also frozen them but you will need to totally thaw before cooking).

Place on microwave plate. Cook on high for 4 minutes per breast. Let them set for 1-2 minutes.

To serve - don't forget to remove the toothpicks if using. I always serve with hollandaise sauce poured overtop - rice and a green veggie (brocolli is easy to chop and have ready to steam in a few minutes). For the sauce I use Knorr which is really good and no one knows you didn't make it yourself. This meal can be made all in advance and will take only about 1/2 hour to take from stove to table.
