Recipe: Easy Mashed Potatoes and Corn

EASY MASHED POTATOES AND CORN

This bacon-and-cheese studded mixture makes an excellent accompaniment for grilled or roasted meats.

1 (11-oz.) can Green Giant Super Sweet Yellow and White Corn, undrained
2 cups milk
3 tablespoons margarine or butter
1/2 teaspoon salt, if desired
1/8 teaspoon pepper
2 cups mashed potato mix (dry)
1/2 cup sour cream
2 tablespoons grated Parmesan cheese
2 tablespoons real bacon bits

In medium saucepan, combine corn, milk, margarine, salt and pepper; mix well. Cook over medium heat until mixture is hot and bubbly.

Remove from heat. Stir in potato flakes and sour cream until well blended. Sprinkle with Parmesan cheese and bacon bits.

*One cup frozen whole kernel corn can be substituted for the canned corn.

Makes 8 (1/2-cup) servings
