Recipe: Easy Skillet Cobbler, Peach Dumplings, Range Top Peach Cobbler for Rae Lynn, Ohi

Easy Skillet Cobbler
Skillet cobbler with peaches and biscuit mix.
2 1/2 c. sliced peaches
2/3 c. sugar
3 tbsp. butter
1 tsp. lemon juice
1 c. biscuit mix
2 tbsp. butter
1/3 c. milk
Cinnamon, to taste
Sugar (optional)
Combine peaches and 1/3 cup sugar. Add water to make 3 1/2 cups. Put peaches, butter and lemon juice in a 10 inch skillet. Cover and cook over medium heat until simmering. Combine biscuit mix and 1/3 cup sugar. Cut in 2 tbsp. butter to coarse crumbs. Add milk to make soft dough. Spoon over hot fruit. Cover and cook until dough is done, about 12-15 minutes. Sprinkle with a mixture of sugar and cinnamon, if desired.
Peach Dumplings
Dumplings are spooned onto boiling peaches in syrup.
1 cup sugar
1 tablespoon butter
2 cups hot water
2 cups fresh sliced peaches, or frozen
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups milk or cream
In a medium saucepan over medium heat, combine sugar, butter, and hot water. Add peaches and bring to a boil. In a medium bowl, combine flour, baking powder, and salt; stir in milk or cream to form a stiff batter. Drop large spoonfuls of batter onto the boiling fruit. Cover and cook for about 20 minutes. Spoon out dumplings and fruit into bowl and serve with cream or ice cream. Serves 4.
Range Top Peach Cobbler
3 tablespoons packed brown sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
1 pinch salt
29 oz. canned sliced peaches in syrup
1 tablespoon lemon juice
1 tablespoon margarine or butter
1 cup buttermilk biscuit mix
1/3 cup milk
1 tablespoon packed brown sugar
1 tablespoon finely chopped walnuts
Combine 3 tablespoons brown sugar, cornstarch, cinnamon and salt in 10-inch skillet. Stir in undrained peaches, lemon juice and butter. Cook over low heat 3 minutes, stirring constantly, until thickened and bubbly. Keep warm.
Combine biscuit mix and milk in bowl. Mix just until moistened. Drop dumplings by tablespoonfuls over hot peach mixture. Combine remaining 2 tablespoons brown sugar and walnuts. Sprinkle over dumplings.
Cook over low heat, uncovered, 10 minutes. Cover and cook 10 minutes more or until dumplings are fluffy.
