Recipe: Eggnog Bars with Eggnog Icing

Eggnog Bars

1/4 cup butter, softened
1 cup sugar
1 tsp rum extract
2 1/4 cups flour
1 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp salt
1 cup lowfat eggnog
1/2 cup miniature chocolate chips (or candied
cherries or chopped nuts) -- optional

Eggnog icing:
3/4 cup sifted powdered sugar
1/2 tsp rum extract
3 tsp lowfat eggnog -- (3 to 4 teaspoons)

Mix butter and sugar until creamed; blend in 1 teaspoon rum extract.

In a separate bowl, combine flour, soda, nutmeg and salt. Add dry ingredients alternately with eggnog to creamed mixture. Stir in chocolate chips. Spread in greased 13x9 inch baking pan.

Bake at 350 degrees for 18-20 minutes.

For Eggnog Icing:
Mix powdered sugar, 1/2 teaspoon rum extract and enough eggnog (3-4 teaspoons) to make mixture pourable.

Drizzle icing over warm bars. Cool, cut into bars.
