Recipe: Eggplant Cakes

EGGPLANT CAKES
Recipe from Martinique- Guadaloupe

1 1/2 eggplant
1 egg well beaten
2 tb milk
salt & ground pepper
1/8 tsp cayenne
1 cup all purpose flour
1 tsp double acting baking powder
Oil for deep frying

Peel the eggplant, cut in cubes & boil.. Drain & mash into a puree. Add the eggs, milk, salt, pepper & cayenne. Sift baking powder & flour & beat in the flour into the mix tablespoon by tablespoon until well mixed. Deep fry by tablespoons until golden brown. Serve as an accompaniment or Appetizer.
