Recipe: Fried Dumplings (Domplines)

Fried Dumplings (DOMPLINES)
These variation of the dumplings (FRIED) is typical of my hometown, Ponce. When I was 9 years old I was taught by my mother to do them & I do them still, with a soft heart because I remember her when I am doing them.

4 cups flour
1 tsp baking powder
2 tb shortening (or lard)
1 cup lukewarm water
1/2 tsp salt
vegetable oil for frying

Combine flour, baking powder, & shortening in a bowl. Add salt to water and then, the water to the flour, a bit at a time, while mixing until it has the consistency of dough. Knead the dough. Form the dough into patties using a round cutter. Fry in hot oil until golden. Drain on paper towels & serve, specially with soups & as base for appetizers.
