This recipe is purely Puerto Rican.
Yaut a (Taro) Fried Cakes (Fr turas de Yaut a)
1 1/2 cups taro, peeled
3 tb baking powder
2 tsp SOFRITO
2 large eggs, lightly beaten
3/4 cup finely grated Parmesan Cheese
salt & pepper to taste
vegetable oil for frying
Finely shred the taro root, with a processor. Place in a bowl & add remaining ingredients. Mix very well. Heat oil until very hot, drop mixture by tbsps. and fry until golden brown on all sides. Drain on paper towels & serve.
