Recipe: Deviled Ham Tea Sandwiches
Appetizers and SnacksDEVILED HAM TEA SANDWICHES
FOR THE FILLING:
2 cups ham, minced (smoked ham or Canadian bacon can be substituted)
4 tbsp mayonnaise
1 tbsp Worcestershire sauce
1/4 tsp chipotle or red pepper sauce, or according to taste
2 tbsp minced green onion
2 tbsp minced Italian parsley
TO SERVE:
12 pieces of sandwich bread, thinly sliced
TO MAKE THE FILLING:
In a small bowl, mix all ingredients for the filling together well. Cover and chill in the refrigerator.
TO SERVE:
Spread a slice of bread with the ham spread. Cover with a piece of bread (using a different variety of bread is nice here). Press down on the sandwich lightly. Continue, using all 12 slices of bread to make 6 sandwiches.
Using cookie cutters, cut the sandwiches and place them on a platter. The remaining part of each sandwich can be cut with a knife into interesting geometric shapes, removing the crust if you like.
Cover with a slightly dampened towel and plastic wrap and refrigerate if not serving immediately.
