Eggplant Parmigiana (WW points=3)

I'd never cooked an eggplant in my life but bought one today and cooked this recipe. It is awesome and really easy!
1 eggplant (about 1 1/2 lbs), peeled and sliced into 1/2-inch thick slices
1 egg white, lightly beaten with 2 Tbsp water
1/2 cup seasoned Italian bread crumbs
1 cup reduced fat spaghetti sauce
1/4 cup shredded fat free mozzarella cheese
3 T grated parmesan cheese
Heat over to 375 degrees F.
Spray a cookie sheet with cooking spray. Dip the eggplant slices in the egg white then the bread crumbs. Bake 30 minutes, turn over, bake 10 more minutes.
In an 8x8-inch pan (sprayed with cooking spray) put 1/4 cup of the spaghetti sauce. Put a layer of the cooked eggplant in. Top with half of the rest of the sauce and half the cheese. Put the rest of the eggplant in and cover with the rest of the sauce and cheese. Cover. Put back in the oven and continue baking for another 30 minutes.
Makes 4 servings at 3 points each
(193 cal, 3g fat, 4.3g fiber).
I found half the recipe at 6 points turned it into a main dish. Add a slice of high fiber bread and a salad with a bit of dressing and this is a complete meal for about 8 points :)
