Electric Skillet Baked Potatoes
Preheat the electric skillet at 400 degrees F.
Scrub potatoes and wipe dry. Grease skins lightly and pierce with a fork in several places. Place on rack to prevent burning on the bottom. If you do not have a rack that fits in your skillet, metal skewers or poultry lancers may be used to rest the potatoes on.
Cover and bake 1 hour or until done.
