Recipe: Potatoes O'Brien

POTATOES O'BRIEN

2 tbsp. butter
1 small onion, finely chopped
1 small green pepper, finely chopped
1 (4 oz.) can pimentos, drained & cut
into strips
6 medium potatoes, peeled & diced
Cooking oil
Salt
Pepper

Heat butter in small skillet. Add onion and green pepper and cook over medium heat until tender. Stir in pimento. Set aside.

In large skillet, heat 1/2 inch oil. Add diced potatoes and fry until brown and tender, turning occasionally. Drain; season with salt and pepper.

Add onion mixture; toss together over high heat for 2 minutes to heat through.
