Recipe(tried): EV re. Chicken Parmesan

Hi Ev, My Mom is Italian and we make it this way. We use our own homemade tomato sauce, but you can use canned.

CHICKEN PARMIGIANA

1 cup flavored bread crumb (or more as neede)
2 eggs (or more as needed)
1 8 oz. pkg. Mozzarella cheese

1 can tomato sauce (29 oz) or your own sauce
grated Parmesan cheese
8 boneless chicken cutlets

Dip chicken into beaten eggs,(with a little milk, salt,pepper and garlic powder added to eggs) and coat well with bread crumbs. In a frying pan, fry chicken in oil, browning on both sides. Arrange alternate layers of tomato sauce, chicken and slices of Mozzarella in baking dish. Sprinkle each layer with Parmesan cheese. Bake at 350 degrees for one hour or until cheese is hot and bubbly. BUON APPETITO!
