FAMILY CORNED BEEF HASH
FOR THE BASE:
2 onions, chopped
1 clove of garlic, finely chopped
oil for frying
1 tin of good quality corned beef
1 tin of good quality sweet corn, drained
2 teaspoons of Worcestershire sauce (add to suit taste)
FOR THE TOPPING:
3 to 4 large potatoes, boiled, ready for mashing
1 sweet potato, boiled, ready for mashing
knob of butter
salt & pepper to taste
Mature farmhouse cheddar, grated (added to taste, see below)
TO PREPARE THE BASE:
Fry onions and garlic in a little oil until onions are brown.
Empty tin of corned beef and sweet corn into a bowl and mix together.
When onions are cooked add to bowl mixture and mix thoroughly (easier when onions are still warm). Add Worcestershire sauce and mix again.
TO PREPARE THE TOPPING:
When all potatoes are cooked, mash together in a bowl with the butter, salt and pepper until creamy textured.
Transfer base filling first to a deep oven dish and add the potatoes mixture on top. Add as much grated mature farmhouse cheese on top of the potatoes as you like (the more you add, the tastier it is I have found...)
Cook in preheated 190 degrees C (375 degrees F) oven for approx 45 minutes or until piping hot all the way through and cheese is fully melted, even browning.
Serve on its own with gravy or add vegetables of your choice.
Alternative:
If you do not like the meat separate from the potatoes mix, as I have done it, mix all the ingredients together, transfer mixture to oven dish & add cheese topping. Depending on where you come from you'll have your own definition of a corn beef hash ...This is mine! and by adding my own personal twist, it brings corn beef hash into the 21st century!
