Recipe: Canadian Baked Eggs (using Canadian bacon)
Breakfast and BrunchCANADIAN BAKED EGGS
6 slices Canadian bacon
12 eggs
2 1/4 cups shredded fat-free cheddar cheese
1 Tbsp. finely chopped fresh parsley (for garnish)
Ground black pepper
Preheat oven to 325 degrees F.
Line bottom of 6 lightly buttered shallow ramekins or individual gratin dishes with bacon, cutting to fit, if necessary.
Carefully break 3 eggs into each dish. Sprinkle cheese over top.
Bake 12-15 minutes, until whites are just set and cheese is melted.
Sprinkle with parsley and pepper to taste before serving.
