Has anyone made these? I can't picture how the cuts are made and how the finished cookies will look.-Micha
HIRVENSARVET
(FINNISH ANTLER COOKIES)
1/4 cup butter, room temperature
1/2 cup sugar
2 egg yolks
1 egg, beaten
2 teaspoons ground cardamom
1/4 cup heavy ream or undiluted evaporated milk
2 cups sifted all-purpose flour
1 cup cornstarch
1 teaspoon baking soda
Preheat oven to 350 degrees F. Grease a cookie sheet.
Cream butter and beat in sugar, beating until sugar crystals have disappeared. Beat in egg yolks, egg and cardamom. Beat in cream.
Sift together flour, cornstarch and baking soda. Add to batter and mix thoroughly.
On lightly floured board roll dough to 1/4 -inch thickness. Cut dough into pieces 1x2-inches. In each piece, about 3/4 from each end, make a crosswise cut about the width of the dough. Pull both ends to make a curve so the cuts open a little. Place on prepared cookie sheet.
Bake for 15 minutes of until golden brown.
