Recipe: Ranger Cookies (using Wheaties)

BERNICE:
Good afternoon. This recipe is one that many of the nation's Bed & Breakfast Inns feature. I hope this will do it for you. If you need information on substitions feel free to send me a post. I can help you there as well.

COMES NOW:

Ranger Cookies

1/2 cup butter
1/2 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 tsp of vanilla
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups oatmeal
2 cups coconut
1 cup Wheaties cereal

Cream the first 3 ingredients. Beat in eggs one at a time for 45 seconds each. Mix in dry ingredients that have been sifted together. Stir in oatmeal, coconut, and Wheaties. Drop by teaspoonfuls on to cookie baking sheet.

Bake at 375 degrees for 10 to 12 minutes.

Makes 6 dozen
