2 can Salmon
1/2 c Long grain rice
1/2 c Grated carrots
1/4 c Chopped onion
1 Egg
1/2 ts Salt & pepper
1 can Cream of mushroom soup
1/2 c Water

Put salmon and its juice in a bowl, remove skin and
bones. Add rice and onions, egg salt and pepper. Mix
well and form into small balls. Put in greased
casserole leaving space for expansion. Mix the soup
and water and pour over the balls. Cover and bake in
350 oven for 1 hour.

1 Egg; Large
3/4 c Milk
1 c Bread Crumbs; Soft
1 lb Salmon; 1 can
1 c Cheddar; Medium, Grated
1 ts Green Pepper; Grated
1 tb Lemon Juice
1/2 ts Celery Salt
1/2 ts Garlic Powder
1/2 c Bread Crumbs; Buttered, Fine

Servings: 4

Beat the egg and milk together and add the soft bread crumbs. Flake
the salmon, removing the skin and bones, and add to the milk and
milk mixture. Add the cheddar cheese and seasonings, blending well.
Place in a greased casserole and top with the buttered bread crumbs.
Bake in a preheated 350 degree F. oven for 35 minutes. May be served
plain or with your favorite tomato or egg sauce.

Marie/ME (03:28:02) : "Grampy's" Lobster Chowder From University of Maine

1 large onion, diced
3 tablespoons butter
4 large potatoes, diced
1/2 cup water
2 to 3 cups cooked lobster meat
4 cups whole milk
salt and pepper to taste

1.Saute onion in butter until soft.
2.Add potato with about 1/2 cup water. Then boil gently until tender or about 10 minutes.
3.Add lobster pieces and milk and heat thoroughly, but do not boil. Use part cream, if desired.

Serve with hot rolls and green salad.

Val,.Ca (01:17:00) : Zesty Salmon Bake

Place salmon steaks or fillets in flat baking dish.
Pour red wine over salmon.
Dab SWEET mustard on top of salmon to cover.
Add minced garlic on top of the mustard.
Marinate for 1-2 hrs.
Bake in the marinade at 350 degrees for 30 minutes or until flaky.

Dawn-NY (01:11:20) : Tuna Bake

2 cans Tuna
1 large bag of any type pasta
1 can cream of mushroom soup
1 can of cheddar cheese soup
diced onion and celery to taste
1 package peas (frozen)
Lawerys season salt and pepper to taste
Optional sliced mushrooms
top with crushed potatoes

Prepare pasta, drain put into baking dish add creamed soups, onion, celery, mushrooms and seasoning than add the tuna and peas then smooth into baking dish and top with crushed potato chips bake about 20 minutes at 350.

Dawn-NY (01:05:26) : Grilled Mahi Mahi

1/4 cup brushed Pineapple, with juice 2 tbs. oil
2 Tbs. teriyaki sauce
1/4 cup ground ginger
1 Tbs. honey
1/4 tsp. garlic powder
1 lb. fish

Place fish in a shallow glass baking dish. Combine remaining ingredients & pour over fish. Let stand for 30 minutes.

Cook fish on a hot oiled grill for 5 to 6 minutes on one side. Turn & cook 5 to 6 minutes or until fish is opaque.

Dawn-NY (01:03:49) : Crock Pot Salmon

2- (15 oz.) cans Salmon
4 cups Bread crumbs
1 can Tomatoes
1 chopped green pepper
1 teaspoons Lemon juice
1 can Cream of onion soup
1 can Cream of celery soup
4 well beaten Eggs
1 tsp. garlic powder
1 tsp. Greek seasoning
2 Chicken ,crushed, bouillon cubes 1/4 1 cup milk

Grease crockpot liner. Combine all ingredients except celery soup & milk. Pour into crock pot. Cover & cook on low heat for approximately 5 hours. Combine cream of celery soup with 1/2 cup of milk and heat in saucepan. Use as a sauce for salmon.

Minced fresh dill, lemon juice an mustard seed
Minced fresh lovage, celery seed, lemon juice and freshly ground black pepper
Fennel seed, mustard seed, bay and grated lemon peel

2 lbs haddock or cod fillets
1 cup finely crushed graham crackers (about 16 squares)
3/4 cup finely crushed saltines (about 25 crackers)
1-1/2 to 2 tsp seasoned salt
Oil for deep-fat frying

Cut fish into 1-in cubes; secure with a toothpick if necessary. Combine cracker crumbs and seasoned salt in a shallow bowl; roll fish in crumb mixture until coated. In an electric skillet or deep-fat fryer, heat oil to 375. Fry nuggets, a few at a time, for 3 min. or until browned. Drain on paper towels. Yield: 4-6 servings.

6 salmon steaks (1-in thick)
1/2 cup butter or margarine, melted
2 tsp seasoned salt
2 tsp Italian seasoning
2 tsp lemon juice
1/2 tsp garlic powder
1/2 tsp grated lemon peel
Dash cayenne pepper

Place salmon on a greased broiler rack. Broil for 8-10 min. Meanwhile, combine the remaining ingredients in a bowl; mix well. Brush some over the salmon. Turn and broil 10 min. longer or until fish flakes easily w/a fork. Baste w/remaining butter mixture.

KellyWA (11:54:31) : Heart-shaped Salmon Loaf

2 cups cooked or canned salmon
1/2 cup uncooked oatmeal
2 eggs beaten, or 4 egg whites
1 medium onion, finely chopped
1/4 green pepper, finely chopped
2 tablespoons minced fresh parsley
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce, or
Chinese Marinade
1/4 teaspoon sea salt
3/4 cup milk (not necessary if microwaving)

Combine all ingredients and place the mixture in a buttered loaf pan, or a heart shaped pan, metal or
glass if using the conventional oven, plastic or glass if using the microwave oven. If baking in
conventional oven, preheat to 350 degrees and add the milk to the mixture to keep it moist while
baking; bake for about 45 minutes. If using the microwave, omit the milk and microwave for 10-12
minutes on 70% power, or until done.

KellyWA (11:49:50) : Superb Salmon Loaf
4 servings

The leftovers of this delicately flavored loaf make
wonderful sandwiches.

1 (14 oz.) can salmon, drained and flaked
1/2 cup liquid egg substitute
2 slices whole wheat bread, (1 ounce slices) crumbled in your Cuisinart
2/3 cup regular nonfat dry milk
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped onions
1 teaspoon lemon juice
1 teaspoon dried basil
1/2 teaspoon grated fresh lemon peel
1/2 teaspoon dried parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dry mustard
1/4 teaspoon celery seed

Preheat oven to 350 .

Spray a 4 X 4 or 4 X 8-inch loaf pan with nonstick cooking spray.

In a large bowl, combine all ingredients, mixing well. Spoon mixture into prepared loaf pan, pressing gently into loaf.

Bake, uncovered, 1 hour, or until top of loaf is golden.
Let stand 5 minutes, then remove loaf to a serving plate. Pass the ketchup

SALMON CROQUETTES

1 cup cooked grits
2 cups flakes salmon
2 tablespoons chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
1 1/2 cups breadcrumbs
2 eggs beaten
Hot shortening
1 (10 1/2-ounce) can cream of celery or mushroom soup
1/4 cup milk
Pimento strips

Combine grits, salmon, onion, salt, pepper and Worcestershire sauce. Chill. Shape into twelve croquettes. Roll in bread crumbs. Dip in egg and roll again in breadcrumbs. Pan fry in hot shortening until golden brown. Turn only once. Heat soup and milk. Pour over croquettes. Garnish with pimento strips.
Yield: 6 servings

susannahoh (11:48:50) : SALMON (MEAT) LOAF

2 cups salmon, undrained (you can substitute a 16-ounce can of tuna)
2 eggs
2 cups soft bread cubes or 1/3
cup dry bread crumbs
1/4 teaspoon salt
1/8 teaspoon pepper
1 small onion chopped
2 tablespoons fresh parsley, finely chopped (optional)
2 tablespoons lemon juice
4 tablespoons butter, melted
Dash of Tabasco
1/4 teaspoon Worcestershire sauce
1 tablespoon green pepper, minced

Preheat oven to 350 degrees. In a bowl, flake salmon, removing bones and skin. With a fork, beat in eggs; add remaining ingredients; mix well. Place in a well greased eight by four-inch loaf pan or eight-inch square pan, forming into a loaf. Bake for fifty to sixty minutes or until golden brown and knife inserted in center comes out clean. To serve, cut into slices.
Yield: 6 servings

Salmon Patties: Form mixture into eight patties. Dip each patty into dry breadcrumbs. Fry patties in oil or butter over low heat until golden brown on both sides, about ten minutes.

4-6 firm white fish filet (perch works well)
1 cup mayo
2 tab. Dijon mustard
2-3 pinches of parmesan cheese

place fish on a lightly oiled foil lined pan. mix mayo, mustard and parmesan together and put on top of fish broil until done
