FISH GUMBO
This is delicious, I got the recipe
while stationed in the Bahamas

1 lb. frozen fish fillets (or leftovers)
1/3 cup butter
2 onions
2 green peppers
2 (no.2 cans) tomatoes & okra
2 t. salt
1/2 t. pepper
1 bay leaf
1 cup cooked rice

Melt butter, add onions and green peppers, cook until tender, stir in tomatoes & okra & seasonings. Cook over low heat for 15 minutes. Cut fish into cubes, Add fish and rice to gumbo. Cook for about 8 minutes or until fish flakes easily when tested with fork.
