CAULIFLOWER WITH CHEESE SAUCE
1 medium head cauliflower Salted water
1/3 cup chopped green onions
2 tablespoons melted butter
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Few grains ground cayenne pepper
2 tablespoons flour
1/3 cup Carnation Instant Nonfat Dry Milk crystals plus water to make 1 cup
3/4 cup shredded Cheddar cheese
1 tablespoon chopped pimiento
Cut leaves and stalk from cauliflower; retaining enough of core to hold head together. Wash thoroughly. Place upright in saucepan containing about 1-inch salted water. Cover tightly and heat to boiling. Reduce heat and simmer gently until just tender, 10-15 minutes.
Saute green onions in butter until tender in medium saucepan. Add salt, pepper, cayenne and flour. Stir until blended.
Add water to instant milk crystals to make 1 cup. Stir into flour mixture. Cook until mixture thickens; stir frequently. Add cheese and pimiento; stir until cheese melts.
Place cauliflower on plate. Pour sauce over cooked cauliflower. Serve additional sauce on side.
