Blanching simply means to put in boiling water and boil for a few minutes. Whole kernel corn is blanched for 5 minutes, drain and cool in ice water. Tomatoes are cooked until soft.
I peel my tomatoes and rough chop them before cooking them. Allow them to cool to room tempt.
Once they are cooled, mix the corn and tomatoes together and freeze.
