Fresh Peach Cake
1/2 c. butter
1 1/2 c. brown sugar
2 c. plus 1 Tbsp. flour
1 c. buttermilk
1 egg
1 tsp. baking soda
1/8 tsp. salt
1/4 c. sugar
1 tsp. cinnamon
2 1/2 c. diced peaches
Cream butter and sugar; add egg. Add flour, soda, salt, and milk. Beat until smooth.
Gently fold in peaches. Pour into greased and floured 9x13-inch pan. Mix cinnamon and sugar and sprinkle over top.
Bake at 350 degrees for 30-35 minutes.
