I like to prepare venison in the following way: After soaking in salt water, cut tenderloin into manageable pieces and tenderize with metal tenderizer. Add more salt and pepper to taste and flour. Fry in oil. My mom always fixed it this way when I was growing up, and now I fix it like this for my family. We love it fixed this way. It's especially good with Heinz 57 sauce.
