Frozen Pistachio Pudding Salad

This came from my mother's collection of recipes (30 yrs old) and is a family tradition at Christmas. Everyone loves it.

1 small (3 oz) pkg. Pistachio Pudding mix
Large can crushed pineapple (reserve juice)
1 (9 oz.) tub of whipped topping, thawed
1 cup chopped pistachios
1 cup mini marshmallows

Prepare pudding as directed on package using the reserved pineapple juice in place of same amount of water.

Fold in each remaining ingredients.

Pour into plastic ring mold*. Freeze.

Allow to soften partially 20-30 minutes before serving. Unmold on bed of lettuce.

*For holiday color, I like to add Maraschino cherries in bottom of mold.
