Recipe: Fruit Kuchen and Kuchen with Peaches

Hi Marsha,

I'm happy to hear that you're enjoying the newsletter and we're glad you're here too! I'll try to help with the kuchen recipe, but I'm not sure what type you're looking for. I'm including two recipes in this post that I haven't tried and that don't call for pears but they look like good recipes and I'm sure pears can be used for the fruit in either. I hope one is close to what you're looking for. Hopefully others will have some recipes to share too.

Fruit Kuchen
Placidia Farm Bed and Breakfast - Randolph, Vermont

1 1/2 cups all-purpose flour
3/4 cup butter (1 1/2 sticks)
1/2 teaspoon salt
1 egg
2 tablespoons milk
3 cups fruit (apples, rhubarb, peaches)

3 eggs, beaten
1 cup sugar
2 tablespoons all-purpose flour
3/4 cup milk

1/2 cup all-purpose flour
1/2 cup sugar
2 tablespoons butter
Cinnamon

Mix 1 1/2 cups of flour, 3/4 cup of butter, and salt as for pie crust. Add 1 egg. Add 2 tablespoons milk; beat. When the liquid is absorbed, pat the dough into a 9x13-inch pan. Do not roll out. Place the fruit on the dough.

Mix 3 eggs, 1 cup of sugar, 2 tablespoons of flour, and the milk; pour over the fruit.

Mix 1/2 cup of flour, 1/2 cup of sugar, and 2 tablespoons of butter until crumbly. Spread over the top of the fruit. Sprinkle with cinnamon to taste. Bake in a 350 degree oven for 40 to 50 minutes.

Serves 6 to 8

Kuchen with Peaches

1/2 cup butter, melted
3/4 cup sugar
1 egg
1 cup sour cream
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder

Topping:
1/4 cup butter
1/4 cup sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1/4 teaspoon cloves
1/4 teaspoon cinnamon

Fruit:
3 large sliced peaches (3 cups), or blueberries

Grease a 9x13-inch pan. In a large bowl cream together 1/2 cup of butter and 3/4 cup of sugar. Blend in the eggs and sour cream. Mix in 1 1.2 cups of flour and the baking powder. Spread the dough in the prepared pan.

In a small bowl mix the topping ingredients. Sprinkle half of the topping over the dough. Top with the fruit and sprinkle with the remaining topping. Bake in a 350 degree F oven for 35 to 40 minutes.

Serves 8
