Recipe: Quick and Easy Lemon Chicken and Rice (using Minute Rice)

QUICK AND EASY LEMON CHICKEN AND RICE

1/2 cup Kraft House Italian Dressing
1 lb. boneless skinless chicken breasts, cut into strips
1 cup chicken broth
1 cup small broccoli florets
1 red pepper, cut into strips
1 cup thinly sliced carrots
2 cups Minute Brown Rice, uncooked
1 tsp. lemon pepper seasoning
2 Tbsp. Kraft 100% Grated Parmesan Cheese

Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 minute.

Add broth, broccoli, red pepper and carrots. Bring to boil.

Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 minutes.

Remove from heat. Let stand 5 minutes.

Stir in lemon pepper seasoning; sprinkle with cheese.
