Recipe(tried): Fruit Salad with Lemon-Honey Dressing

FRUIT SALAD/LEMON-HONEY DRESSING

2 tablespoons lemon juice
1 teaspoon canola oil or oil of choice
1 teaspoon water
2 tablespoons honey
2 cups leaf lettuce
1/2 banana, cubed
1/4 cup strawberries, quartered
1/2 peach, sliced

In a small bowl, combine lemon juice, oil water and honey; let sit 20 to 30 minutes to blend flavors. In a medium bowl, tear lettuce into bite-size pieces; add banana, strawberries and peaches. Toss lightly with dressing, using just enough to moisten; serve immediately. Makes 2 servings.
