Recipe: Gardner's Market Awesome Turkey Loaf (using spinach and stuffing mix)

2 1/2 lb lean ground turkey
1 (10 oz.) box frozen chopped spinach, defrosted and squeezed almost dry
1 cup herb seasoned stuffing mix, crushed
1 medium carrot, finely chopped
1 medium onion, finely chopped
1 stalk celery, finely chopped
1 large egg white, lightly beaten
1/4 cup plus 2 tablespoons ketchup, divided use
1 tbsp prepared horseradish, undrained
1/2 tsp salt
1/2 tsp fresh ground black pepper
Preheat the oven to 350 degrees F. Spray a (9 x 5 x2 3/4-inch) loaf pan with no-stick cooking spray.
In a large mixing bowl, thoroughly mix all the ingredients, except for 2 tablespoons ketchup. Place in the prepared loaf pan.
Bake in the center of the oven for 50 to 60 minutes or until the temperature of the loaf reaches 160 degrees F. Let cool in the pan for 10 minutes, then transfer to a serving platter. Let cool another 5 minutes before slicing.
Makes 8 servings
