CUCUMBER TOMATO SALAD
2 cups sliced cucumbers
1 cup chopped tomatoes
1/4 cup chopped green peppers
1/4 cup sliced red onion
1/4 cup wine vinegar
1/4 cup white vinegar
1 tbsp. reduced calorie Italian dressing (4 calories per Tbsp.)
Sugar substitute to equal 2 tbsp. sugar
Combine veggies in a bowl. Combine rest of ingredients. Pour over veggies. Cover and refrigerate at least 2 hours.
Makes 4 servings
Each serving equals 1 3/4 vegetable
