GATES BARBECUE SAUCE
This is the recipe Ollie Gates Gives out When Asked for his Sauce Recipe.
This is almost identical to what is served at the restaurant. Make sure and use the cheap ketchup (baker's and Chef's Brand) in the red tubs that are identical to the Heinz ketchup tubs that hold 114 oz. at Sam's club.
Do Not Cook! Let this set for 24 hours for all the spices to mingle in the refrigerator.
1 cup sugar
1/4 cup salt
2 tbsp celery seed
2 tbsp ground cumin
2 tbsp ground red pepper
2 tbsp garlic powder
1 tbsp chili powder
2 quart ketchup
2 cup apple vinegar
1 1/2 tsp liquid smoke
1 tsp lemon juice
In a small bowl, mix together sugar, salt, celery seed, cumin, red pepper, and garlic powder, and chili powder. Set aside.
In a large bowl, combine remaining ingredients. Add dry ingredients, and mix well.
Serve warm or at room temperature.
Sauce can be stored in an airtight container in the refrigerator for 2 to 3 weeks or in freezer for up to 6 months.
