Recipe: German Cabbage Slaw (with carrot and pineapple)

GERMAN CABBAGE SLAW

1 pound red or green cabbage, thinly sliced
1 cup shredded carrot
1/4 cup finely chopped onion
1 (15 ounce) can pineapple tidbits in juice
1/2 cup oil
1/3 cup red wine vinegar
1 clove garlic, crushed
2 teaspoons caraway seed
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
6 to 8 drops hot pepper sauce
Lettuce (optional, for serving)

In large bowl, toss together cabbage, carrot and onion.

Drain pineapple reserving juice. Combine reserved juice with remaining ingredients except pineapple; mix well. Toss with cabbage.

Just before serving, add pineapple and toss. Serve on bed of lettuce, if desired.

Makes 6-8 servings
