Recipe: Ginger-Citrus Chicken (Pollo en Salsa de Gengibre y Frutas Citricas)

6 chicken thighs, boned and skinned
4 teaspoons salt
2 teaspoons black pepper
juice of 2 large oranges
3 tablespoons butter
1 (2-inch) piece fresh ginger, peeled and cut into strips
1 orange, peeled and sectioned
juice of 1 lemon
Season the chicken with the salt and pepper and marinate in 1/2 cup of the orange juice for 10 minutes. Drain and set aside.
Heat the butter in a large skillet and saute the ginger over medium-high heat until lightly browned.
Add the chicken and cook until lightly browned on both sides.
Add the orange sections, the remaining orange juice, and the lemon juice. Simmer for 10 more minutes.
