Ajilimojili Sauce (Salsa de Ajilimojili)
3 garlic cloves, peeled
10 sweet chili peppers, seeded
1 teaspoon salt
1 teaspoon black pepper
juice of 3 lemons
1/2 cup olive oil
Grind all the dry ingredients in a mortar. Add the lemon juice and oil and mix well.
NOTE: This sauce can also be prepared in a blender or food processor.
