Glass Noodle Salad
rec.food.recipes/Tracey Claybon (2000)
2-4 oz stir-fry style beef
1/2 cup citrus juice
1/2 cup soy sauce
1 tsp red pepper flakes
1 1/2 tsp ginger powder -OR- 1/2 tsp grated ginger root.
4-6 oz cooked, slightly cooled cellophane noodles
2-4 whole red chillis
butter lettuce
Mix marinade by combining citrus juice, soy sauce, red pepper flakes and ginger. Reserve 1/4 cup of marinade for a dressing to top the salad later.
Marinate the cooked beef overnight.
Stir fry the beef. To serve cook the cellophane noodles.
Toss a few leaves of lettuce together with noodles, cooked beef and the reserved marinating sauce. The mixture should then be turned onto a bed of butter lettuce for serving.
I like to make and add 1/2 cup of extra sauce.
