Recipe: Chicken and Roasted Vegetable Sandwich

Chicken and Roasted Vegetable Sandwich

I tried this new recipe the other night and I have to say that is was really delicious. It is made with eggplant (instead of bread) along with chicken breast, zucchini, mozzarella cheese, peppers (which I did not add) and such.

1/2 tsp. rosemary
1/8 tsp. pepper
1/2 lb. boneless chicken breast, 1/4-inch thick
1 eggplant, 1/2-inch slices
8 shiitake mushrooms, stems removed
1 zucchini, 1/4-inch slices
1 red onion, 1/4-inch slices
1 red pepper, 1-inch wide strips
3 Tbsp. vinegar, preferably balsamic
1 tsp. thyme
1/4 tsp. crushed red pepper flakes
4 oz. mozzarella, 1/4-inch slices

Cook chicken and rosemary in skillet sprayed with Pam. Keep warm. Broil veggies on cookie sheets, turning once, with the vinegar and other spices drizzled over them until crisp and tender. Make sandwich - eggplant slice, chicken, cheese, veggies, eggplant slice.

I did not use the vinegar mixture but rather sprinkled garlic powder on the eggplant and thyme on the zucchini (the only other veg that I used).
