Recipe(tried): Lemon Ice Soup
SoupsADVERTISEMENT
I was first served this soup, several years ago, by a Catholic Priest, Father Don in Pasadena, Texas, at a dinner for six, won at a fund raiser for the Philharmonic Society. It was absolutely delicious. It is a wonderful summer soup for any luncheon.
LEMON ICE SOUP
3 cans Cream of Chicken Soup
3 cups Half and Half
3 teaspoons Curry Powder
(dissolved in 6 Tablespoons cream)
9 Tablespoons fresh Lemon Juice
Mix soup, half and half, and curry powder in a food processor. Chill. Just before serving, add lemon juice and mix. This may be prepared one day ahead. Serves 10-12.
