Marshmallow Salad
rec.food.recipes/Joanna Musgrave (2000)
The Marshmallow Salad recipe was my late mother-in-laws and it's delicious. Actually though, some may not care for it for it's kinda sweet - I love it
1 egg
1/2 cup pimeapple juice reserved from can
1 tbsp flour
1/2-3/4 cup diced celery
2 cup cabbage, shredded
1/4 lb miniature marshmallows
1 Can pineapple chunks, drained
1 cup heavy cream (1/2 pint) whipped
Combine egg and pineapple juice. Add a little vinegar if not tart enough and flour. Beat ingredients together and heat to a boil, stirring constantly. Let cool and then mix with rest of ingredients. Set in refrigerator. Before serving, whip heavy cream, and add to salad.
