Recipe: Green Beans Gremolata

Green Beans Gremolata

1/4 cup fresh grated Parmesan cheese, (1 ounce)
2 tablespoons grated lemon peel
3 cloves garlic, minced
1/2 cup fresh chopped parsley
2 pounds green beans, trimmed
3 tablespoons olive oil

In a small bowl, mix together the Parmesan, lemon peel and garlic. Set aside.

Bring large pot of water to boil. Add string beans and cook until crisp-tender, about 3 minutes. Drain well and place in a large bowl. (Be sure to shake as much water as possible from the beans for peak flavors.)

Toss the beans with the olive oil to coat thoroughly, add the parsley mixture and toss gently, yet thoroughly to coat. Salt and pepper to taste and serve immediately.

Yield: 8 servings
