POTATOES AND HAM WITH CHEESE SAUCE
1 tablespoon butter or margarine
2 tablespoons flour
1 teaspoon salt
Ground black pepper (to taste)
1 cup milk
1/2 cup shredded process cheese
2 cups diced cooked potatoes
1 cup diced cooked ham
Melt butter or margarine and blend in flour and seasonings. Add milk slowly and cook over low heat until thickened, stirring constantly.
Remove from heat and add cheese.
Put alternate layers of potatoes and ham in a greased baking dish. Pour cheese sauce over the top.
Cover, and bake at 375 degrees F (moderate oven) for 30 minutes. Remove cover and bake 10 minutes longer.
Makes 4 servings, 2/3 cup each
