GRILLED PORK STEAKS WITH LEMON BUTTER SAUCE
3 tablespoons butter
2 teaspoons strained lemon juice
1 very large clove garlic, peeled
6 (1-inch thick) center cut boneless pork chops
Kosher salt
In a small saucepan over medium heat, melt the butter and stir in the lemon juice. Crush the garlic into the lemon butter, stir and cook until the garlic is golden, and remove the sauce form the heat.
Heat the grill. Set the rack 3 inches above the coals.
Brush one side of the pork with the lemon butter, sprinkle with kosher salt, and set with the salt side down on the grill. Sear 1 minute. Brush the top with lemon butter, season with the salt, turn, and grill 1 minute more. Turn the meat, cover the grill, and cook each side 3 to 5 minutes more, brushing with the remaining lemon butter each time you turn the meat. Serve at once.
