I bought fresh swordfish at Costco. I was looking for a good recipe for it. I think this is the one. A good fish steak should be accompanied by a Mediterranean Sauce & what best sauce than the great Ali-Oli (Aioli).
Grilled Swordfish with Rosemary Aioli
Serves: 4 as a main course
For the Aioli:
2 egg yolks
2 garlic cloves, minced
1/2 tsp. kosher salt
1/4 tsp. fresh ground pepper
1 cup olive oil
2 Tbsp. minced rosemary
2 Tbsp. minced lemon zest
For the Fish:
1/4 cup olive oil
1/4 cup chopped thyme
2 garlic cloves, minced
Four 6-oz. swordfish steaks, 1/2-inch thick
For the Aioli:
Combine the egg yolks, garlic, salt and pepper in the container of a blender. Gradually add the oil in a steady stream with the motor running until thick, about 2 to 3 minutes. Transfer to a bowl and fold in the rosemary and lemon zest.
For the Fish:
Preheat the grill to medium-high heat. Combine the olive oil, thyme and garlic. Spread over the fish and marinate at least 15 minutes. Place on the grill and cook until browned on both sides, about 5 minutes per side, turning once. Top each piece of fish with a dollop of the aioli.
