Ham Gravy--my favorite gravy!
If you have good brown drippings with a small amount of fat, just add a little water to the drippings to make some nice brown brothy stuff. Start with about 1 cup. Some people use cold coffee, which I think makes it "Red Eye" gravy, but I prefer water. Place the broth in a small saucepan. In a separate bowl, combine about 1 T. cornstarch with about 1/4 c. water and stir this mixture into the cold broth. Stir constantly over medium high heat until the mixture thickens. If the gravy is too thick or too concentrated, add a little more water. Likewise, if it is too think, make a little more cornstarch mixture and slowly add to the gravy.
