Recipe: Ham Leftovers - Ham and Turkey Dish, Ham and Cheese Almost Souffle, Ham and Rice Dinner, Ham and Veggie Casserole

Ham & Turkey Dish:
Serves 6

1/4 c.butter
1/4 c.flour
1&1/4 c.milk
1/2 c.chicken or turkey broth
1/4 c.white wine
1/2 tsp.curry powder
salt & pepper to taste
1 c.diced,cooked turkey
1 c.diced,cooked ham
1/4 lb.sliced fresh mushrooms or 1 4 oz.can,drained
2 Tbls.diced pimento,opt.

Melt butter & blend in flour.Add milk & broth gradually.Stirring constantly.Bring to a boil,still stirring & cook until thickened.

Lower heat & stir in remaining ingredients one at a time.Simmer 10 minutes,stirring occasionally,till heated through.Serve in patty shells or toast cups or over hot fluffy rice.

Ham & Cheese Almost Souffle':
serves 6-8

8 slices white bread
3/4 lb.cheddar cheese,cubed
3 c.diced cooked ham
1 4 oz.can sliced mushrooms,drained opt.
6 large or 8 small eggs
3 & 1/2 c.milk
2 tsp.worchestershire sauce
1 tsp.dry mustard
1/2 tsp.paprika
1 tsp.salt
1/8 tsp.pepper

In a buttered 3 qt. casserole dish,layer bread,cheese,ham & optional mushrooms in order given until casserole is full,ending with layer of cheese.

Beat together remaining ingredients & pour over casserole.If liquid does not show 2/3 way up in the dish,add more milk.Bake at 350 degrees for 1 hour.Serve immediately.

Ham & Rice Dinner:
Serves 6

3 c.hot cooked rice
2 & 1/2 c.cooked ham,cut in julienne strips
1&1/2 Tbls.butter
1/2 c.chopped onion
2 c.thinly sliced celery
1 can cream of chicken soup
2 Tbls.dry white wine,opt.
1&1/2 tsp.prepared mustard
1/4 tsp.dill weed
3/4 c.sour cream
1/3 c.sliced pimento

While rice is cooking,saute ham in butter for 2 minutes.Add onions & celery & cook over medium heat till tender crisp.Stir in soup,optional wine,mustard, dill weed & heat thoroughly.Add sour cream & pimento.Heat,but DO NOT boil.Serve over hot fluffy rice.

Ham & Veggie Casserole:
Serves 10-12

1 (20 oz.)pkg.frozen cauliflower flowerets
1 (20 oz.)pkg.frozen broccoli flowerets
4 Tbls.butter
3 Tbls.flour
3 c.milk
6 oz.(or 1&1/2 c.)shredded cheddar cheese
4 oz.(or 1 c.)grated Parmsan cheese
1/2 tsp.salt
3 c.chopped ham
3 c.fresh bread crumbs tossed with 4 Tbls.melted butter

Cook cauliflower & broccoli in boiling salted water until slightly underdone.Drain & set aside.Melt 4 Tbls.butter in 1 qt.saucepan.Stir in flour & blend well.Gradually add milk,stirring constantly till thickened.Add cheddar,Parmesan cheese,salt & stir over low heat till cheese melts.

Place veggies in ungreased 4 qt. casserole dish & sprinkle with chopped ham.Pour cheese sauce over all.Make a border of buttered bread crumbs around edge of casserole.Bake uncovered at 350 degrees F. for 20-30 minutes or till crumbs are lightly browned.
