Recipe: Ham Salad Sandwiches
SandwichesHAM SALAD SANDWICHES
1/2 lb. cooked ham, chopped
1/2 cup shredded cheddar cheese
1/2 cup celery, finely chopped
1/2 cup scallions, finely chopped
1/4 cup carrot, grated or shredded
1/4 cup fat-free mayonnaise or salad dressing
2 eggs, hard cooked, chopped
2 Tbsp. green olives, chopped
1/2 tsp. garlic powder
16 slices rye bread
8 lettuce leaves
Combine all ingredients, except bread and lettuce, in a food processor or bowl.
Season with pepper to taste and mix well. Chill thoroughly.
Spread ham salad over half the bread slices. Top with lettuce and other bread slices.
Servings: 8
