Recipe: Harvest sweet potato pie with lemon extract

I don;t remember who was looking for a sweet potato pie with lemon extract, but I think I found it. I was looking through some past reminisce magazines and think I may have come across it. Here it is.
Harvest sweer potato pie
4 Eggs
1- 12 oz. evaporated milk
1-1/4cups sugar
3/4 cup butter or margarine, melted
2 tsp. ground cinnamon
2. tsp pumpkin pie spice
1 tsp.vanilla extract
1 tsp. lemon extract
1/2 tsp. nutmeg
1/2 tsp. salt
4 cups cooked sweet potatoes
2 unbaked 9 inch pie shells
whipped cream, optional
In a mixing bowl, combine first 10 ingredients; mix well. Beat sweet potatoes. Pour into shells. Bake at 425 for15minutes. Reduce heat to 350;bake 30-35 mintues longer or untill a knife insertednear center comes out clean. cool completely. Serve with whipped cream if desired. Store in refrigerator. Yield 12-16 servings
