Recipe(tried): Hawaiian Chicken and Rice

Thank you for the recipe.This recipe was given to me by a friend.I liked it.

Hawaiian Chicken and Rice

2 (10 oz) Pkgs Lipton Onion Soup Mix
1 (18 oz) can Apricot Preserves (Smuckers)
2 (20 oz) cans Pineapple chunks or Tidbits, drained, reserve 1/2 cup juice
2 Tbsp Lemon Juice
2 Tbsp Cornstarch
1/2 cup Pineapple Juice or juice from the can
Large pkg Chicken Breasts or 6 to 8 Chicken Breasts
Make enough rice for 8 people
Optional: Mushrooms

Combine lemon juice, about 1/2 cup pineapple juice and cornstarch and mix well. Then add in onion soup pkgs, apricot preserves and pineapple.

Pour over chicken, cover and bake for 1 hour in 350 oven. If baking uncovered, turn chicken several times.

Serve over the rice. For the leftovers I mixed the rice into the chicken.
